Most people don't like Mondays, I am not a big fan either. But who can blame us honestly? If you were asked to think of things you like about Mondays you probably will not find as many as if I asked the same question for Fridays.
But it does not mean your Monday has to be a nightmare, there are easy ways to make this day of the week better. And as a cooking addict I believe a great, comforting recipe is one of the best way to start the week !
And if many people hate Mondays we can not say the same thing about banana bread and chocolate ( admit it, your mouth is already watering).
Banana Bread Recipe
175g melted butter
175g brown sugar
3 or 4 mashed bananas
1 teaspoon baking powder
Preheat oven to 170°C ( 325F). Place the butter,sugar,bananas,eggs,flour and baking powder in a bowl and mix until just combined. Pour the mixture into a greased loaf tin (or lined with non-stick baking paper) and bake for 50-60 minutes until cooked.
To make the chocolate icing just melt some chocolate in a pan and spread it on the cake. You can add some water in the pan if your chocolate isn't liquid enough.
Serve hot and enjoy !
