Healthy Quinoa and Coconut Milk Pudding Recipe

They say breakfast is the most important meal of the day, if it is true you should not make yourself the same boring breakfast everyday.

What about a quinoa and coconut milk pudding? An exotic way to start your day and forget about winter (at least until you step outside and the wind blows in your face, they also say every good thing must come to an end…)

Quinoa and coconut milk pudding 

Ingredients (2 servings): 

▪   1 + 1/2 cup coconut milk

▪   1/2 cup milk

▪   1 cup quinoa

▪   Lemon juice or honey

Bring the quinoa, the milk and the coconut milk to a boil, reduce the heat and simmer until the quinoa is cooked (it should be tender), about 15 minutes. You can add a bit of lemon juice or honey to sweeten. 

Now if you still think breakfast is boring you can add some fresh fruits, chocolate or nuts to this quinoa pudding.
